How to make vegan chocolate brownies

Veganism doesn't mean eating a diet of just veggies and salads, you know! Not only are these brownies suitable for plant-based dieters but they're also pretty good on the macro-front, making them a great alternative to regular brownies.

Method

Soak the chia seeds in the water and leave for at least 30 minutes before preparing everything else

Preheat the oven to 175°C and linea square baking tin (8x8 inch) with baking paper/parchment

Blitz all of the ingredients (including the soaked chia seeds) in a blender until smooth

Pour the mix into the lined baking tin

Bake for around 25 minutes (or until a skewer comes out clean)

Leave to cool before removing from the tin

Mix the peanut flour and water together to form the topping and drizzle on top of the brownies
