Easy Homemade Pumpkin Pie Protein Bars Recipe

Ingredients

Base
1 cup Oats
1 cup Dates
1 tbsp Coconut oil
Filing
1/2 Light cream cheese
1 cup Cooked pumpkin
1 tsp Ground cinnamon
Pinch Nutmeg
Pinch Cloves
1/2 tbsp Ground ginger
1 heaped tbsp Honey
2 scoops Hydra 6® protein powder, Peanut Nutter
Dash Almond milk
1 tbsp Coconut oil
80ml Coconut cream or coconut milk
Topping
70g Dark chocolate
1 heaped tsp Coconut oil
2 tbsp Carb Killa® protein spread, White Chocolate
Edible sugar eyes

Method

First, add the oats into a food processor and blitz to form a 'dough'. Then, pour in the dates and the coconut oil and blend again until well combined

Next, press the dough into a lined baking tin or tray, pressing firmly to create a smooth, flat base. Pop this into the freezer to set

While the base sets, make the filling. Blitz all of the filling ingredients in a blender until you're left with a smooth filling

Take the set base out of the freezer and pour the filling on top. Then, place pack in the freezer to set for a further few hours

Once set, slice into 10 even-sized bars. Melt the dark chocolate and drizzle this on top of the bars

Then, melt the Carb Killa® spread in the same pan as the chocolate to create a dark and white chocolate mixture. Drizzle this over the bars

Finish by adding the edible eyes then store in the fridge or freezer
