1 cup | gluten-free flour |

¾ cup | vanilla protein powder (vegan/whey) |
2 tsp | vanilla extract |
2 tbsp syrup | (maple/fruit syrup of choice) |
2 tbsp | ground flaxseed |
2 tsp | ground cinnamon |
2 tsp | baking powder |
½ tbsp | salt (optional) |
1 ½ cup | unsweetened applesauce* |
½ - 1 cup | unsweetened almond milk (depends on the protein powder used) |
¼ cup | almond butter |
¾ | Grenade Apple Rumble Carb Killa, chopped |
Crumble | |
½ cup | old-fashioned rolled oats |
½ cup | apple chopped |
2 tbsp | vanilla vegan/whey protein |
½ tsp | ground cinnamon |
1 tbsp | syrup (maple/fruit syrup of choice) |
2 tbsp | buttery spread, melted |
2 tbsp | unsweetened applesauce |
¼ | Grenade Apple Rumble Carb Killa, chopped |
Start by preheating the oven to 170°C.
Grab yourself a medium mixing bowl and whisk together all of the dry ingredients for the muffins. Next add the wet ingredients and mix until no dry clumps remain. Expect the batter to be nice and thick.
Add in the chopped Carb Killa to the mixture and divide the batter equally between 12 muffin cases.
Bake the muffins in the preheated oven for 15 minutes.
While the muffins are baking, combine all the crumble ingredients in a small bowl. Once the muffins are finished, spoon the crumble topping over each muffin and pop in the oven for a further 10-15 minutes.
TIP – the muffins are ready when you can insert a toothpick/knife and it comes out clean.
