Apple Rumble Muffins

Ingredients

1 cup gluten-free flour
¾ cup vanilla protein powder (vegan/whey)
2 tsp vanilla extract
2 tbsp syrup (maple/fruit syrup of choice)
2 tbsp ground flaxseed
2 tsp ground cinnamon
2 tsp baking powder
½ tbsp salt (optional)
1 ½ cup unsweetened applesauce*
½ - 1 cup unsweetened almond milk (depends on the protein powder used)
¼ cup almond butter
¾ Grenade Apple Rumble Carb Killa, chopped
Crumble
½ cup old-fashioned rolled oats
½ cup apple chopped
2 tbsp vanilla vegan/whey protein
½ tsp ground cinnamon
1 tbsp syrup (maple/fruit syrup of choice)
2 tbsp buttery spread, melted
2 tbsp unsweetened applesauce
¼ Grenade Apple Rumble Carb Killa, chopped

Method

1.

Start by preheating the oven to 170°C.

2.

Grab yourself a medium mixing bowl and whisk together all of the dry ingredients for the muffins. Next add the wet ingredients and mix until no dry clumps remain. Expect the batter to be nice and thick.

3.

Add in the chopped Carb Killa to the mixture and divide the batter equally between 12 muffin cases.

4.

Bake the muffins in the preheated oven for 15 minutes.

5.

While the muffins are baking, combine all the crumble ingredients in a small bowl. Once the muffins are finished, spoon the crumble topping over each muffin and pop in the oven for a further 10-15 minutes. 
TIP – the muffins are ready when you can insert a toothpick/knife and it comes out clean.

Allow to cool and enjoy!
