Ingredients

Vegetarian and vegan recipes

Tofu

14oz tofu
10oz broccoli
3 tbsp oil
2 tbsp liquid aminos or soy sauce
1 tsp fresh ginger
1 tbsp agave or maple syrup
2 tsp garlic powder
2 tsp ground cumin
1 tsp smoked paprika
1 tsp chilli flakes
1-2 tsp dried oregano
A pinch of salt and pepper

Sweetcorn Salsa

3.5oz sweetcorn
3.5oz cherry tomatoes
½ red bell pepper, finely diced
2 scallions, thinly sliced
1 tbsp olive oil
1 tsp white wine vinegar
½ tsp garlic powder
A pinch of salt and pepper

To serve

Tortillas
Lettuce
Coleslaw

Method

1) First, drain the tofu and lay between kitchen paper for at least 30 minutes to soak up excess liquid
2) Then, preheat the oven to 400°F and line a large tray with parchment paper
3) In a large bowl, mix together the oil, aminos, ginger, syrup, spices, oregano and salt and pepper
4) Then, dice the tofu into cubes and add to the bowl. Coat the tofu in the sauce and then place on your prepared tray

5) Put the broccoli into the bowl and coat in the remaining sauce, then place on the tray with the tofu and bake for 35-40 minutes
6) While your tofu bakes, make the salsa: drain the sweetcorn and tip into a bowl. Add the tomatoes, red bell pepper and scallions
7) Next, whisk together the oil, vinegar, garlic powder and seasoning and stir into the sweetcorn mix
8) To serve, layer up the lettuce, coleslaw, tofu and broccoli onto a tortilla, top with the salsa and chunks of the Go Nuts™ Peri Peri Spicy Chilli bars and enjoy!
