Gingerbread Cheesecakes

Great British Bake Off eat your heart out, @fitfoodiefeed's has pulled it out the bag with this Gingerbread Cheesecake. Topped with Gingerbread protein bar goodness, these treats are a tasty way to get your protein fix.

Ingredients

Base
200g Ginger Biscuits
65g Light Brown Sugar
115g Unsalted Butter
Filling
200ml Double Cream
375g Full Fat Cream Cheese
55g White Sugar
1.5 tbsp Plain Yoghurt
1/2 tsp Lemon Juice
1/2 tsp Vanilla Extract
Topping
1 - Chopped Gingerbread Grenade Bar

Method

Blend/smash the biscuits into crumbs and melt the butter, then combine together in a mixing bowl along with the light brown sugar.

Spoon approx 1 tbsp of the mixture into cupcake cases (ideally placed in a muffin tin) and press down with the back of a spoon until it’s a smooth, flat layer.

Bake in the oven on 180°C fan for 5 mins (optional but helps to hold it together!)

Set aside then in a separate mixing bowl add the double cream and whisk using a hand mixer for a minute or 2 until it’s stiff.

In another bowl whisk together the cream cheese, sugar, yoghurt, lemon juice and vanilla with your hand mixer, then fold in the cream and mix slowly with a spatula.

Add the filling on top of the bases, smooth down and refrigerate over night.

Add your toppings - chopped up Gingerbread bar and crumbled up ginger biscuit!
